One of my many metabolic irritations that make it hard for me to eat normally and make it hard for me to maintain a normal BMI is that I have Polycystic Ovarian Syndrome (and the related insulin resistance). Sometimes it feels like if I even look at a carb (and particularly a high GI one), I put on weight. Which doesn’t come off. It’s frustrating.
I’ve been doing a lot of research lately on using vitamins to support my naturally lessened ability to metabolise carbs correctly and have started taking Blackmores Sugar Balance vitamins a few times a day - and they’re really helping to stop me from the insatiable carb cravings which come with PCOS. They have a mixture of vitamins which help the body to deal with sugar/carbs (I like the fact that it’s one pill rather than taking heaps of different ones at high expense).

Did a bit of an experiment for breakfast today since I’ve given up processed sugar and flour for Lent - sweet, creamy, and nutty breakfast (super!) quinoa! Really pleased with the results. Bit of a treat, but still highly nutritious!

This recipe is, yes, quite high in fat (but coconut oil is, from all my reading, a GOOD fat given its high levels of naturally-occuring MCT oils… the cream not so much, so just skip it if you want). Cinnamon has loads of awesome health properties, as do chia seeds (omega oils at breakfast, anyone?). I used maple syrup as a sweetner because it is natural, relatively low GI, and the woody flavour complements the nuttiness of the quinoa really well… but any other sweetner/no sweeter would also work. This breakfast should keep you full for AGES!
I assume everyone knows a bit about quinoa, but if not, it’s a superfood - a seed that looks, and partially acts, like a grain. It’s got a high protein content (I think about 18%?), lots of trace vitamins/minerals, is easy to cook, gluten-free, and tastes nutty.
This recipe is not an every day food, but for a treat breakfast, it’s great!
